Method

  1. Step 1. Cook the vegetables with turmeric, salt and a little water in a heavy pan until just tender, about 12–15 minutes.
  2. Step 2. Grind the coconut, cumin seeds and green chilli to a coarse paste with a little water.
  3. Step 3. Stir the coconut paste into the cooked vegetables and simmer gently for 5 minutes.
  4. Step 4. Remove from heat, stir in the curd and mix well so it does not split.
  5. Step 5. Finish with coconut oil and curry leaves, and let the flavours sit for a few minutes.
  6. Step 6. Meanwhile, cook the Kerala red rice in plenty of water until tender, about 25 minutes, then drain and serve with the avial.
