Bengali-style rohu macher jhol

A light West Bengal fish curry made with rohu, a widely available lower-mercury freshwater fish, simmered with potato and a simple mustard-oil masala. Katla or mrigal work just as well if rohu is not available.

Method

  1. Step 1. Rub the fish steaks with half the turmeric and a little salt, and set aside for 10 minutes.
  2. Step 2. Heat the mustard oil in a pan until it just smokes, then shallow-fry the fish pieces for 2 minutes per side until lightly browned. Remove and set aside.
  3. Step 3. In the same oil, fry the potato wedges until golden, then add the cumin seeds, remaining turmeric and green chilli.
  4. Step 4. Add the ginger paste and tomato and cook until soft, then add about 1.5 cups (360 ml) of water and bring to a simmer.
  5. Step 5. Simmer until the potato is nearly tender, then gently slide in the fried fish and simmer for a further 6–8 minutes until the fish flakes easily and is cooked through.
  6. Step 6. Serve hot with steamed rice.
