Method

  1. Step 1. Drain the soaked chana and pressure-cook in fresh water until just tender but not mushy, about 20 minutes (4 whistles).
  2. Step 2. Wash the onion, tomato and cucumber thoroughly in clean running water before chopping, and use safe drinking water throughout.
  3. Step 3. Drain the cooked chana well and cool to room temperature.
  4. Step 4. Toss the chana with the chopped onion, tomato and cucumber.
  5. Step 5. Sprinkle over the chaat masala and lemon juice, mix well, and finish with fresh coriander. Serve immediately rather than letting it sit out.
