Method

  1. Step 1. Simmer the chicken with the whole spices in about 4 cups (about 950 ml) water for 20 minutes until cooked right through; strain and reserve the stock, discarding the whole spices.
  2. Step 2. Heat ghee in a heavy pan and fry the onion until golden. Add the fennel powder and cooked chicken and stir briefly.
  3. Step 3. Whisk the curd into the reserved hot stock and pour it back over the chicken.
  4. Step 4. Add the soaked rice, bring to the boil, then cover tightly and cook on low heat for about 15 minutes until the rice is tender and liquid absorbed.
  5. Step 5. Rest for 5 minutes before fluffing and serving, checking the chicken is piping hot throughout.
