Method

  1. Step 1. Drain the soaked chana and pressure-cook in fresh water until tender, about 25 minutes (5–6 whistles).
  2. Step 2. Heat the oil in a pan and fry the onions until golden brown.
  3. Step 3. Add ginger-garlic paste, then the tomato puree, turmeric and chole masala, and cook until the oil separates.
  4. Step 4. Add the cooked chana with about 1 katori (about 150 ml) of its cooking liquid and simmer for 15–20 minutes until the gravy thickens.
  5. Step 5. Meanwhile, knead the atta with water into a soft dough and roll into thin rotis; cook each on a hot tawa until lightly browned on both sides.
  6. Step 6. Garnish the chole with coriander and serve hot with the rotis.
