Method
- Step 1. Place the eggs in a pan of water, bring to the boil and simmer for 10 minutes until the yolk is fully set. Cool, peel and halve.
- Step 2. Heat the ghee in a heavy pan and fry the whole spices and onion until golden.
- Step 3. Add the ginger-garlic paste and mixed vegetables and stir-fry for 3–4 minutes.
- Step 4. Add the rice and 3 cups (about 720 ml) water, bring to the boil, then cover and simmer on low for about 15 minutes until the rice is tender and water absorbed.
- Step 5. Fluff the rice, top with the halved eggs and serve hot.
