Method
- Step 1. Heat the oil in a pan and fry the onion for 3–4 minutes until soft.
- Step 2. Add the ginger-garlic paste and green chilli and cook for a minute, then add the tomato, turmeric and chilli powder and cook until the tomato softens.
- Step 3. Beat the eggs in a bowl (about 1 katori, roughly 200 ml) with a pinch of salt.
- Step 4. Pour the eggs into the pan and scramble over medium heat until fully set with no runny parts, about 3–4 minutes.
- Step 5. Scatter with coriander leaves and serve hot with warm roti.
