Method

  1. Step 1. Heat the coconut oil in a wide pan, add the curry leaves and onion, and fry gently until soft but not browned.
  2. Step 2. Add the ginger, green chilli and turmeric and cook for a minute.
  3. Step 3. Pour in the coconut milk and bring to a very gentle simmer — do not boil hard.
  4. Step 4. Slide in the fish pieces and simmer gently for 10–12 minutes, spooning the sauce over, until the fish flakes easily and is cooked through.
  5. Step 5. Serve hot with steamed rice or appam.
