Method

  1. Step 1. Heat a flat tawa and spread a ladle of dosa batter (about half a katori) into a thin round.
  2. Step 2. Beat one egg with a little onion, chilli and coriander, and drizzle it evenly over the dosa while it is still on the tawa.
  3. Step 3. Cook until the egg is fully set with no runny parts, about 3–4 minutes, drizzling a little oil around the edge.
  4. Step 4. Fold in half and repeat for the second dosa.
  5. Step 5. Serve hot with coconut chutney or sambar if you like.
