Method

  1. Step 1. Wash the methi leaves well to remove grit, chop finely and set aside.
  2. Step 2. Heat oil in a pan, add cumin seeds, then onion, and cook until golden.
  3. Step 3. Add ginger-garlic paste and cook for a minute, then add tomato, turmeric, coriander powder and salt, and cook until soft.
  4. Step 4. Add the chopped methi and cook for 6–8 minutes until wilted and the raw smell disappears.
  5. Step 5. Gently fold in the paneer cubes and garam masala, and simmer for 5 minutes so the paneer absorbs the flavours.
  6. Step 6. Serve hot with freshly made roti, about 2 rotis per portion.
