Method

  1. Step 1. Heat the oil in a pan, add cumin seeds and let them sizzle, then add the onion and fry until soft.
  2. Step 2. Add the tomato and green chilli and cook until the tomato softens.
  3. Step 3. Stir in the turmeric, then add the crumbled paneer and cook for 3–4 minutes, mixing well.
  4. Step 4. Season with salt and stir through the coriander.
  5. Step 5. Warm the rotis, spoon the paneer bhurji along the centre of each, roll up tightly and wrap for a packed lunch.
