Method

  1. Step 1. Soak the soya chunks in hot water for 15 minutes, then squeeze out excess water and set aside.
  2. Step 2. Heat oil in a pan, add onion and cook until golden, then add ginger-garlic paste and cook for a minute.
  3. Step 3. Add the tomato puree, turmeric, chilli powder and salt, and cook until the oil separates.
  4. Step 4. Add the mixed vegetables, soya chunks and enough water to make a gravy, cover and simmer for 15 minutes until the vegetables are tender.
  5. Step 5. Stir in the garam masala and simmer for a further 2 minutes.
  6. Step 6. Serve hot with freshly made roti.
