Method

  1. Step 1. Rinse the sprouted moong well, then steam or boil in fresh water for 8–10 minutes until completely soft and cooked through — sprouts must always be cooked, not eaten raw.
  2. Step 2. Drain the cooked sprouts well.
  3. Step 3. Heat the oil in a pan, add mustard seeds and urad dal and fry until the dal turns golden.
  4. Step 4. Add curry leaves and dried red chilli, then the cooked sprouts, and toss over the heat for 2–3 minutes.
  5. Step 5. Season with salt, stir through the grated coconut, and serve warm.
