Method

  1. Step 1. Mix the curd, ginger-garlic paste, tandoori masala and lemon juice in a large bowl.
  2. Step 2. Add the chicken pieces, coat well and marinate in the fridge for at least 1 hour, ideally overnight.
  3. Step 3. Heat the oven to 200°C, or heat a tawa on the stove with a little oil.
  4. Step 4. Arrange the chicken on a tray with the onion, capsicum and tomato, and roast for about 25–30 minutes, or cook covered on the tawa, turning occasionally, until the chicken is cooked through with no pink meat and juices run clear.
  5. Step 5. Check a thick piece reaches 74°C in the centre before serving hot with the roasted vegetables.
