Method

  1. Step 1. Mix the chopped onion, tomato, capsicum, green chilli and coriander together with a pinch of salt.
  2. Step 2. Heat a tawa (griddle) and pour a ladleful of batter, spreading gently into a thick circle (thicker than a dosa).
  3. Step 3. Scatter a spoonful of the vegetable mixture over the top and press lightly with the back of a spoon.
  4. Step 4. Drizzle oil around the edges, cover and cook for 2–3 minutes until the underside is golden.
  5. Step 5. Flip carefully and cook the vegetable side for a further 2 minutes until cooked through.
  6. Step 6. Repeat with the remaining batter and serve hot with chutney or curd.
