Method
- Step 1. Put the couscous in a bowl, pour over the boiling water, cover and leave for 5 minutes.
- Step 2. Fluff the couscous with a fork and let it cool slightly.
- Step 3. Wash and chop the tomato and cucumber, and drain the sardines and sweetcorn.
- Step 4. Stir everything through the couscous with the onion, lime juice and oil.
- Step 5. Serve straight away, or pack into a container and keep chilled.
