Method

  1. Step 1. Soak the abacha in hot safe drinking water for 5 minutes, then drain well.
  2. Step 2. Warm the palm oil gently with the ground crayfish and pepper to make a light dressing — do not overheat the oil.
  3. Step 3. Reheat the smoked fish in a pan until piping hot throughout, then flake, checking carefully for bones.
  4. Step 4. Toss the drained abacha through the dressing.
  5. Step 5. Top with the fish, shredded leaves, onion and tomato, and serve straight away.
