Acha, also called fonio, is a small grain grown across the Middle Belt and northern Nigeria. Steamed and served with vegetables and grilled chicken, it makes a light bowl providing protein, fibre and B vitamins.

Method
- Step 1. Rinse the acha in two changes of water, then steam or simmer with the measured water for 10–12 minutes until soft and fluffy. Fork through.
- Step 2. Season the chicken with lime and a little salt and grill for 15–18 minutes, turning once, until the juices run clear and there is no pink meat.
- Step 3. Heat the oil, cook the onion for 3 minutes, then add the carrot, tomato and greens with a splash of water and cook for 6 minutes until just tender.
- Step 4. Slice the cooked chicken and serve over the acha with the vegetables and a squeeze of lime.
