Method

  1. Step 1. Boil the beans in the water for 35 minutes, then add the sweetcorn and cook for a further 15–20 minutes until both are soft.
  2. Step 2. Heat the oil in a separate pan, cook the onion for 4 minutes, then add the blended tomato and cook for 8 minutes.
  3. Step 3. Stir the tomato base through the beans and simmer for 5 minutes. Season lightly.
  4. Step 4. Boil the plantain slices in lightly salted water for 12–15 minutes until tender.
  5. Step 5. Serve the adalu with the plantain alongside, keeping the starch portion moderate.
