Method

  1. Step 1. Blend the soaked beans with the onion and pepper to a thick, smooth batter, then whisk to lighten.
  2. Step 2. Heat the oil and fry spoonfuls of batter for 4–5 minutes, turning, until golden and cooked right through to the centre.
  3. Step 3. Drain on kitchen paper.
  4. Step 4. Loosen the pap paste with cool water, then pour on the boiling water in a steady stream, stirring until thick and fully cooked.
  5. Step 5. Serve two or three akara with a small bowl of pap and the chopped pawpaw. Keep portions small if appetite is reduced.
