Method

  1. Step 1. Blend the beans with the onion and pepper into a thick, smooth batter and whisk to add air.
  2. Step 2. Heat the oil in a pan and drop in spoonfuls of batter, using only a moderate amount of oil.
  3. Step 3. Fry for 3–4 minutes each side until golden and cooked through the middle, then drain.
  4. Step 4. Toss the washed tomato, cucumber and avocado with lime juice.
  5. Step 5. Serve the akara hot with the salad alongside.
