Method

  1. Step 1. Heat the oven or a covered pan. Rub the mackerel with lime juice, a little oil and seasoning.
  2. Step 2. Bake or cook the fish for 18–20 minutes until the flesh is opaque and flakes easily right through.
  3. Step 3. Roast or pan-cook the plantain slices with the remaining oil for about 15 minutes until golden.
  4. Step 4. Steam or boil the carrot and greens for 6–8 minutes until tender.
  5. Step 5. Serve the fish with the plantain and vegetables while hot.
