Method

  1. Step 1. Heat the oven to 200°C, or use a covered pan over medium heat.
  2. Step 2. Toss the sweet potato wedges with 1 tbsp oil and bake for 20 minutes.
  3. Step 3. Add the fillets, brushed with the remaining oil and lime juice, and bake for a further 12–15 minutes until the fish is opaque and flakes easily throughout.
  4. Step 4. Cook the washed greens with the onion in a covered pan for 4–5 minutes.
  5. Step 5. Serve everything hot.
