Method

  1. Step 1. Boil the soaked beans in the water for 45–55 minutes until completely soft, topping up as needed.
  2. Step 2. Fry the onion in the oil, then add the tomatoes, pepper and carrot and cook for 8 minutes.
  3. Step 3. Stir the sauce into the beans and simmer for 8–10 minutes.
  4. Step 4. Add the washed shredded greens and cook for 3 minutes more.
  5. Step 5. Serve hot on its own or with a small portion of yam or plantain.
