Method

  1. Step 1. Boil the plantain in lightly salted water for 12–15 minutes until tender.
  2. Step 2. Heat the oil and cook the onion for 4 minutes, then add the blended tomato and pepper and cook for 8 minutes.
  3. Step 3. Lay the mackerel into the sauce and simmer for 8–10 minutes, turning once, until the fish flakes easily and is opaque throughout.
  4. Step 4. Stir the shredded greens through for the final minute.
  5. Step 5. Serve the sauce over the boiled plantain.
