Method

  1. Step 1. Boil the beans in fresh water for 40–45 minutes until soft, then drain.
  2. Step 2. Cook the brown rice in a separate pan for 25–30 minutes until tender, then drain.
  3. Step 3. Heat the oil, soften the onion, add the blended tomato and cook for 10 minutes, then fold in the beans.
  4. Step 4. Serve the rice topped with the beans and sliced avocado, finished with lime juice.
