Method

  1. Step 1. Blend the tomatoes, pepper and half the onion into a smooth base.
  2. Step 2. Season the chicken lightly, then grill or bake for 25–30 minutes, turning, until the juices run clear and no pink meat remains.
  3. Step 3. Fry the remaining sliced onion in the oil, add the blended base and cook down for 10 minutes.
  4. Step 4. Stir in the rinsed brown rice and the water or stock, cover and simmer gently for 35–40 minutes until tender, adding a little water if needed.
  5. Step 5. Serve with the grilled chicken and the fresh salad.
