Method

  1. Step 1. Bring the water to the boil with the onion, pepper soup spice and chilli if using.
  2. Step 2. Add the catfish steaks and simmer gently for 12–15 minutes until the flesh is firm, opaque and cooked through.
  3. Step 3. Add the carrot and garden egg and cook for a further 6–8 minutes until tender.
  4. Step 4. Stir in the washed scent leaf, season lightly and serve hot.
