Method

  1. Step 1. Rinse the brown rice and cook in boiling water for 25–30 minutes until tender, then drain.
  2. Step 2. Heat the oil and cook the onion for 4 minutes, then add the chicken and brown on all sides.
  3. Step 3. Add the blended tomato and pepper with 200 ml water, and simmer for 15 minutes until the chicken is cooked right through with no pink meat.
  4. Step 4. Stir in the okra and cook for a further 4–5 minutes so it stays green and slightly firm.
  5. Step 5. Serve the chicken and okra over the brown rice.
