Method

  1. Step 1. Heat the oil and fry the onion, then add the blended tomato and pepper and cook for 10–12 minutes.
  2. Step 2. Add the chicken, thyme and stock, bring to the boil and simmer for 20 minutes.
  3. Step 3. Add the sweet potato cubes and cook for a further 15 minutes until soft.
  4. Step 4. Check the chicken is cooked right through — no pink meat and the juices run clear — then season lightly and serve.
