Method

  1. Step 1. Heat the oil and cook the onion for 5 minutes, then brown the chicken pieces on all sides.
  2. Step 2. Add the blended tomato and pepper and cook for 10 minutes until reduced.
  3. Step 3. Stir in the lentils, carrots and water, and simmer for 20–25 minutes until the lentils are soft.
  4. Step 4. Check the chicken is cooked right through with no pink meat and the juices run clear.
  5. Step 5. Season lightly and serve with a moderate portion of brown rice or boiled yam.
