Method

  1. Step 1. Boil the chicken with one chopped onion until fully cooked through, about 25 minutes, then set aside and keep the stock.
  2. Step 2. Blend the tomatoes, pepper and remaining onion and cook down in the oil for 15 minutes.
  3. Step 3. Return the chicken with a little stock and simmer for 10 minutes.
  4. Step 4. Add the carrot and green beans and cook for a further 5–6 minutes.
  5. Step 5. Check there is no pink meat before serving with brown rice, yam or plantain.
