Method

  1. Step 1. Boil the soaked chickpeas in fresh water for 45–60 minutes until tender, then drain. Tinned chickpeas need only rinsing.
  2. Step 2. Heat the oil and soften the onion for 4 minutes.
  3. Step 3. Add the blended tomato and pepper and cook for 10 minutes until reduced.
  4. Step 4. Add the carrots and 200 ml water and simmer for 8 minutes.
  5. Step 5. Stir in the chickpeas and green beans and simmer for a further 6 minutes. Serve with rice, yam or bread.
