Method

  1. Step 1. Heat the oil and cook the onion for 3 minutes, then add the tomatoes and pepper and cook for 3 minutes.
  2. Step 2. Add the spinach and cook until just wilted.
  3. Step 3. Pour in the beaten eggs and cook, stirring, until fully set with no runny egg.
  4. Step 4. Warm the wraps briefly in a dry pan.
  5. Step 5. Fill, roll and serve, or cool quickly and wrap for later the same day.
