Method

  1. Step 1. Boil the beans in the water for 55–70 minutes, topping up as needed, until very soft and easily mashed.
  2. Step 2. Mash roughly with the back of a spoon and season lightly with salt.
  3. Step 3. While the beans cook, blend the soaked peppers with the tomatoes.
  4. Step 4. Heat the oil in a pan, cook the sliced onions gently for 12–15 minutes until deep brown, then add the blended pepper and cook for a further 10 minutes.
  5. Step 5. Spoon the sauce over the mashed beans and serve with wholemeal bread.
