Method

  1. Step 1. Boil the beans for 45 minutes until soft, topping up with hot water as needed.
  2. Step 2. Cook the brown rice in boiling water for 25 minutes until tender, then drain.
  3. Step 3. Wash the ewedu well, then cook in a little boiling water for 5 minutes and mash or blend briefly to the usual smooth texture.
  4. Step 4. Heat the oil, cook the onion for 3 minutes, add the blended tomato and pepper and simmer for 10 minutes into a light stew.
  5. Step 5. Serve the rice topped with the beans, the ewedu and a spoon of the tomato stew.
