Method

  1. Step 1. Boil the beef with the onion and a little salt for 35–40 minutes until fully tender and cooked through.
  2. Step 2. Wash the ewedu leaves in several changes of clean water.
  3. Step 3. Bring the stock to the boil, add the leaves and cook for 5 minutes until soft, then mash or blend briefly.
  4. Step 4. Return the beef to the pot with the iru and crayfish if using and simmer for 5 minutes.
  5. Step 5. Check there is no pink meat, season lightly and serve with a small portion of rice, yam or swallow.
