Method

  1. Step 1. Boil the yam slices in lightly salted water for 18–22 minutes until tender.
  2. Step 2. Boil the chopped garden eggs for 8 minutes, drain and mash roughly.
  3. Step 3. Heat the oil, cook the onion for 4 minutes, then add the blended tomato and pepper and cook for 8 minutes.
  4. Step 4. Stir in the mashed garden egg and the ground groundnuts, and simmer for 5 minutes, adding a splash of water if thick.
  5. Step 5. Season lightly and serve with the boiled yam.
