Method

  1. Step 1. Boil the peeled beans in the water for 35–40 minutes until very soft, then mash or blend to a smooth soup.
  2. Step 2. Return to the pan with the palm oil, onion, pepper and crayfish if using, and simmer gently for 10 minutes, stirring so it does not catch.
  3. Step 3. Rub the fish with lime and a little salt and grill for 12–15 minutes, turning once, until the flesh is opaque and flakes apart with no translucent centre.
  4. Step 4. Season the soup lightly and serve with the grilled fish and a small portion of amala, eba or boiled yam.
  5. Step 5. A side of washed sliced tomato and onion adds vitamin C to the meal.
