Method

  1. Step 1. Rub the chicken with the curry powder, half the lime juice and a little salt.
  2. Step 2. Grill or pan-cook for 8–10 minutes each side until cooked right through with no pink meat and the juices run clear. Let it rest, then slice.
  3. Step 3. Toss the shredded cabbage, carrot, pepper and onion with the oil and remaining lime juice.
  4. Step 4. Pack the slaw and chicken in a clean sealed box, adding rice or yam on the side if using.
  5. Step 5. Chill straight away and keep chilled until you eat it.
