Method

  1. Step 1. Boil the yam rounds in lightly salted water for 20 minutes until tender.
  2. Step 2. Rub the mackerel with a little oil and ginger and grill for 6–8 minutes each side.
  3. Step 3. Meanwhile heat the remaining oil, soften the onion, then add the tomato and pepper and cook for 8–10 minutes.
  4. Step 4. Check the fish is cooked through — the flesh should be opaque and flake easily from the bone.
  5. Step 5. Serve the fish with the yam and spoon the vegetable sauce over.
