Method

  1. Step 1. Boil the beef with the onion for 30–35 minutes until tender, keeping the stock.
  2. Step 2. Heat the oil, add the blended tomato and pepper and cook for 12 minutes until thickened.
  3. Step 3. Return the beef with its stock and simmer for 8 minutes.
  4. Step 4. Stir in the washed ugu and cook for 3–4 minutes.
  5. Step 5. Check the beef is cooked through with no pink meat, then serve with rice, yam or plantain.
