Method

  1. Step 1. Mix the millet flour and ground groundnuts with 200 ml of the water to a smooth paste.
  2. Step 2. Bring the rest of the water to the boil, then pour in the paste in a steady stream, stirring constantly.
  3. Step 3. Simmer gently for 10–12 minutes, stirring, until thick and fully cooked.
  4. Step 4. Stir in the ginger and the pasteurised milk if using.
  5. Step 5. Serve in small bowls topped with banana. For a smaller portion, serve half and keep the rest chilled.
