Method

  1. Step 1. Boil the beef with the onion and a little salt for 30–35 minutes until tender, keeping the stock.
  2. Step 2. Heat the oil, add the blended tomato and pepper and cook for 10–12 minutes until thickened.
  3. Step 3. Return the beef with the reserved stock and simmer for 8 minutes.
  4. Step 4. Stir in the washed spinach and cook for 3 minutes.
  5. Step 5. Check the beef is cooked through with no pink meat before serving with rice, yam or plantain.
