Method

  1. Step 1. Toss the sweet potato with 1 tbsp of the oil and roast at 200°C for 25–30 minutes until tender.
  2. Step 2. Heat the remaining oil, cook the onion for 4 minutes, then add the blended tomato and cook for 8 minutes.
  3. Step 3. Add the lentils, carrots and water, bring to the boil, then simmer for 20–25 minutes until the lentils are soft.
  4. Step 4. Stir in the chopped bell pepper for the last 3 minutes so it keeps its vitamin C.
  5. Step 5. Season lightly and serve the lentils over the roasted sweet potato.
