Method

  1. Step 1. Heat the oil and fry the onion until soft, then add the blended tomato and pepper and cook for 10 minutes.
  2. Step 2. Add the rinsed lentils, carrot and water, bring to the boil and simmer for 25–30 minutes until the lentils are soft.
  3. Step 3. Stir in the shredded greens and cook for a further 3 minutes.
  4. Step 4. Season lightly and serve with brown rice, boiled yam or sweet potato.
