Method

  1. Step 1. Heat the oven to 200°C. Toss the sweet potato, pepper, onion and tomato with the oil and seasoning in a tray.
  2. Step 2. Roast for 25 minutes, turning once.
  3. Step 3. Lay the mackerel on top, squeeze over the citrus juice and return to the oven.
  4. Step 4. Bake for a further 12–15 minutes until the fish is opaque, flakes easily and is cooked right through.
  5. Step 5. Serve straight from the tray. If you do not have an oven, cook the vegetables in a covered pan and grill the fish until fully cooked.
