Method

  1. Step 1. Rub the fish with lime and a little salt and grill for 12–15 minutes, turning once, until the flesh is opaque and flakes easily.
  2. Step 2. Heat the oil, cook the onion for 4 minutes, then add the blended tomato and pepper and cook for 10 minutes until reduced.
  3. Step 3. Stir in the millet and carrots and coat well in the sauce.
  4. Step 4. Add the water or stock, bring to the boil, cover and cook on a low heat for 18–20 minutes until the millet is tender and the liquid absorbed.
  5. Step 5. Fluff with a fork, season lightly and serve with the grilled fish.
