Method

  1. Step 1. Blend the soaked, peeled beans with the pepper, onion and warm water until smooth, then stir in the oil and a little salt.
  2. Step 2. Pour into moi moi leaves, small bowls or clean tins, filling about three-quarters full.
  3. Step 3. Steam over gently boiling water for 40–45 minutes until firm and set through the centre.
  4. Step 4. Meanwhile boil the eggs for 8–10 minutes so both the white and the yolk are fully set, then cool and peel.
  5. Step 5. Wash the salad vegetables thoroughly in clean water, slice and dress with lime juice.
  6. Step 6. Serve the moi moi hot with half an egg each and the salad alongside.
