Method

  1. Step 1. Blend the soaked, peeled beans with the pepper, onion and warm water until smooth.
  2. Step 2. Stir in the oil, diced carrot, peas or ugu and a little salt.
  3. Step 3. Pour into moi moi leaves, small bowls or clean tins, filling about three-quarters full.
  4. Step 4. Steam over gently boiling water for 40–45 minutes until firm and set through the middle.
  5. Step 5. Check the centre is fully cooked before serving hot.
